Ingredients
  • 200 gram Leeks
  • 100 gram Cheddar cheese
  • 150 gram All-purpose flour
  • 1 teaspoon Baking powder
  • 2 unit Eggs
  • 1 cup Milk
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Slice the leeks and grate the cheddar cheese.
  2. In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. In a separate bowl, beat the eggs and milk together.
  4. Gradually add the egg mixture to the flour mixture, stirring until well combined.
  5. Fold in the sliced leeks and grated cheddar cheese.
  6. Heat a tablespoon of butter in a frying pan over medium heat.
  7. Spoon a ladleful of the pancake batter into the pan and spread it into a round shape.
  8. Cook the pancake for 2-3 minutes on each side, until golden brown.
  9. Repeat with the remaining batter, adding more butter to the pan as needed.
  10. Serve the leek and cheddar pancakes hot with your favorite toppings.
