Ingredients
  • 800 gram Potatoes
  • 2 teaspoon Olive Oil
  • 1 small Onion
  • 2 clove Garlic
  • 1 cup Spinach
  • 1 cup Cheddar Cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Parsley
Instructions
  1. Preheat the oven to 180°C (350°F). Peel and thinly slice the potatoes.
  2. Heat olive oil in a pan and sauté the onion and garlic until translucent.
  3. Add the spinach to the pan and cook until wilted. Set aside.
  4. Grease a baking dish and layer half of the sliced potatoes at the bottom.
  5. Spread the spinach mixture evenly over the potatoes.
  6. Sprinkle half of the cheddar cheese, salt, black pepper, and parsley on top.
  7. Layer the remaining sliced potatoes on top and sprinkle with the remaining cheese, salt, black pepper, and parsley.
  8. Cover the baking dish with foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes until the potatoes are golden and crispy.
  10. Allow the potato cake to rest for 10 minutes before serving. Slice and enjoy!
