  1. In a bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator.
  2. In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Dissolve the instant coffee granules in hot water and add it to the cream cheese mixture. Mix well.
  3. Stir in the melted chocolate chips.
  4. In a separate bowl, whip the whipping cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
  5. Spread half of the mixture over the chilled crust.
  6. Sift cocoa powder and powdered sugar over the remaining cream cheese mixture. Mix well.
  7. Spread the cocoa mixture over the first layer in the pan.
  8. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  9. Before serving, remove the sides of the springform pan and garnish as desired.
