Pavlova is named after the Russian ballerina Anna Pavlova, who toured Australia and New Zealand in the 1920s.

  1. Preheat the oven to 120°C (250°F). Line a baking sheet with parchment paper.
  2. In a clean bowl, whisk the egg whites until stiff peaks form. Gradually add the caster sugar, cornstarch, and white vinegar while continuing to whisk until the mixture is glossy and stiff.
  3. Spoon the meringue mixture onto the prepared baking sheet, forming a large circle. Smooth the top and create a slight well in the center.
  4. Bake in the preheated oven for 5 hours or until the meringue is crisp on the outside and soft on the inside. Turn off the oven and leave the meringue to cool completely in the oven with the door slightly ajar.
  5. Once the meringue is cooled, carefully transfer it to a serving plate.
  6. In a separate bowl, whip the cream until thick. Spread the whipped cream over the meringue.
  7. Top with mixed berries and garnish with mint leaves.
  8. Serve immediately and enjoy!
