  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour and sugar. Cut the butter into small cubes and add it to the bowl. Rub the butter into the flour mixture until it resembles breadcrumbs.
  3. Add the egg yolk and mix until the dough comes together. If the dough is too dry, add a little cold water.
  4. Roll out the dough on a lightly floured surface to about 3mm thickness. Cut out circles using a round cookie cutter.
  5. Place the circles on a baking tray lined with parchment paper. Spoon a teaspoon of jam onto each circle.
  6. Bake in the preheated oven for 12-15 minutes or until the tarts are golden brown.
  7. Allow the tarts to cool before serving.
