Ingredients
  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 2 tablespoon Sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1 cup Milk
  • 4 tablespoon Butter
  • 2 diced Jalapeno peppers
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a 9-inch square baking dish.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs. Add the milk and melted butter, and mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced jalapeno peppers.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it rest for 10 minutes before serving.
  9. Cut into squares and serve warm.
