Ingredients
  • 4 medium-sized Bell peppers
  • 1 cup Quinoa
  • 1 can Black beans
  • 1 cup Corn
  • 1 small Red onion
  • 2 medium Garlic cloves
  • 1 large Tomato
  • 1 cup Shredded cheese
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • To taste to taste Black pepper
  • To garnish to garnish Fresh cilantro
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the cooked quinoa, black beans, corn, red onion, garlic, tomato, shredded cheese, olive oil, cumin powder, paprika, salt, and black pepper. Mix well.
  4. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  5. Bake in the preheated oven for 25-30 minutes or until the peppers are tender and lightly browned.
  6. Remove from the oven and let them rest for 10 minutes.
  7. Garnish with fresh cilantro and serve hot.
