  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Bell pepper
  • 2 medium Carrot
  • 3 large Potatoes
  • 1 can Canned kidney beans
  • 1 can Canned diced tomatoes
  • 2 cup Vegetable broth
  • 2 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and carrot. Cook until vegetables are tender.
  3. Add potatoes, kidney beans, diced tomatoes, vegetable broth, chili powder, ground cumin, paprika, salt, and black pepper to the pot.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Serve hot and garnish with fresh cilantro.
