Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion, thinly sliced
  • 1 medium Bell pepper, thinly sliced
  • 1 cup Mushrooms, sliced
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 4 piece Hoagie rolls
  • 1 cup Hummus
  • 4 slice Provolone cheese, sliced
  • 4 piece Lettuce leaves
  • 1 piece Tomato, sliced
Instructions
  1. Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and mushrooms. Cook until softened, about 5 minutes. Season with salt and black pepper.
  2. Slice the hoagie rolls lengthwise and toast them.
  3. Spread hummus on the bottom half of each hoagie roll. Top with the sautéed vegetables.
  4. Place a slice of provolone cheese on top of the vegetables. Broil until the cheese is melted and bubbly.
  5. Remove from the oven and top with lettuce leaves and tomato slices.
  6. Cover with the top half of the hoagie roll.
  7. Serve hot and enjoy!
