Ingredients
  • 400 gram Potatoes
  • 1 medium Onion
  • 1 medium Bell pepper
  • 4 unit Eggs
  • 1/4 cup Milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 100 gram Cheddar cheese
  • 2 tablespoon Fresh parsley
Instructions
  1. Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out any excess moisture.
  2. Finely chop the onion and bell pepper.
  3. In a large bowl, beat the eggs with milk, salt, and black pepper.
  4. Heat olive oil in a non-stick skillet over medium heat.
  5. Add grated potatoes, onion, and bell pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the potatoes are golden brown.
  6. Pour the beaten eggs over the cooked hash browns. Sprinkle with grated cheddar cheese and fresh parsley.
  7. Cover the skillet and cook for another 5-7 minutes, or until the eggs are set.
  8. Carefully flip the omelet and cook for an additional 2-3 minutes.
  9. Remove from heat and let it rest for a minute.
  10. Cut the omelet into wedges and serve hot.
