  1. In a bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. Gradually add the flour and mix until well combined.
  4. Divide the dough in half and mix cocoa powder into one half.
  5. Shape each dough into a rectangle and chill for 30 minutes.
  6. Roll out each dough into a rectangle of the same size.
  7. Place one dough on top of the other and roll tightly into a log.
  8. Chill the log for 30 minutes.
  9. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  10. Slice the log into 1/4-inch thick slices and place them on the baking sheet.
  11. Bake for 10-12 minutes or until the edges are golden brown.
  12. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
