Ingredients
  • 1.5 cup Zucchini
  • 1.5 cup Whole wheat flour
  • 0.5 cup Pecans
  • 0.5 cup Oats
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Honey
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine the grated zucchini, whole wheat flour, pecans, oats, baking powder, cinnamon, and salt.
  4. In a separate bowl, whisk together the eggs, honey, coconut oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
