  • 2 teaspoon Baking Powder
  • 0.5 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 1 Egg
  • 0.5 cup Honey
  • 0.25 cup Applesauce
  • 0.5 cup Greek Yogurt
  • 1 teaspoon Vanilla Extract
  • 1 cup Grated Carrots
  • 0.5 cup Chopped Walnuts
  • 0.25 cup Raisins
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the whole wheat flour, oat flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the egg, honey, applesauce, Greek yogurt, and vanilla extract.
  4. Gradually add the wet mixture to the dry mixture and stir until just combined.

  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
