Hand-kneaded Milk Pullman Loaf
The Pullman loaf, also known as a sandwich loaf, is named after the Pullman railway cars that used to serve this type of bread due to its square shape and ability to fit perfectly in the limited space of the train’s kitchen.

In a mixing bowl, combine bread flour, sugar, salt, and instant yeast.

Heat the milk until warm and add it to the dry ingredients. Mix well.

Knead the dough for about 10 minutes until smooth and elastic.

Add the butter and continue kneading until fully incorporated.

Cover the dough and let it rest for 1 hour or until it doubles in size.

Punch down the dough and shape it into a loaf. Place it in a greased Pullman loaf pan.

Cover the pan and let the dough rise for another 1 hour.

Preheat the oven to 180°C (350°F).

Bake the loaf for 30-40 minutes or until golden brown.
