  2. In a food processor, pulse the cashews until finely ground.
  3. In a medium bowl, combine the ground cashews, crushed gingersnap cookies, and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
