  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the gruyere cheese, all-purpose flour, and butter. Mix until the dough comes together.
  3. Roll out the dough on a lightly floured surface to a thickness of about 1/4 inch.
  4. Cut the dough into desired shapes using cookie cutters.
  5. Place the cut dough onto a baking sheet lined with parchment paper.
  6. In a small bowl, whisk the egg yolk with a teaspoon of water. Brush the egg wash over the crackers.
  7. Bake in the preheated oven for 12-15 minutes, or until golden brown and crispy.
  8. While the crackers are baking, prepare the orange shallot jam. Peel and finely chop the shallot. Zest and juice the orange.
  9. In a small saucepan, combine the chopped shallot, orange zest, orange juice, granulated sugar, red wine vinegar, salt, and black pepper. Cook over medium heat until the mixture thickens and becomes jam-like.
  10. Remove the crackers from the oven and let them cool completely.
  11. Serve the gruyere crackers with the orange shallot jam on the side.
