Ingredients
  • 500 gram Zucchini
  • 150 gram Feta cheese, crumbled
  • 2 tablespoon Fresh mint leaves, chopped
  • 2 tablespoon Fresh dill, chopped
  • 4 piece Green onions, chopped
  • 1 piece Egg, beaten
  • 60 gram All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 4 tablespoon Olive oil
Instructions
  1. Grate the zucchini and squeeze out any excess moisture.
  2. In a large bowl, combine the grated zucchini, crumbled feta cheese, chopped mint leaves, chopped dill, chopped green onions, beaten egg, all-purpose flour, baking powder, salt, and black pepper. Mix well.
  3. Heat olive oil in a frying pan over medium heat.
  4. Scoop spoonfuls of the zucchini mixture onto the heated pan and flatten slightly with the back of the spoon.
  5. Cook for about 3-4 minutes per side, until golden brown and crispy.
  6. Remove the fritters from the pan and place them on a paper towel to drain any excess oil.
  7. Serve the Greek Zucchini Fritters warm with tzatziki sauce or yogurt on the side.
