Ingredients
  • 250 gram Penne pasta
  • 2 teaspoon Olive oil
  • 3 piece Garlic cloves
  • 1 piece Red onion
  • 1 piece Zucchini
  • 1 piece Bell pepper
  • 200 gram Cherry tomatoes
  • 100 gram Kalamata olives
  • 150 gram Feta cheese
  • 2 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add minced garlic and sliced red onion. Cook until softened.
  3. Add sliced zucchini, bell pepper, and cherry tomatoes. Cook until vegetables are tender.
  4. Stir in kalamata olives, crumbled feta cheese, fresh parsley, lemon juice, salt, and black pepper.
  5. Add cooked penne pasta to the pan and toss everything together.
  6. Let the flavors meld together for a few minutes.
  7. Serve hot and garnish with additional parsley, if desired.
