  • 1 teaspoon Ground cinnamon

  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 Egg
  • 0.25 cup Molasses
  • 1 teaspoon Vanilla extract
  • 0.5 cup Coarse sugar, for rolling
Instructions
  1. Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, molasses, and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Roll the dough into 1-inch balls, then roll each ball in the coarse sugar to coat.
