Ingredients
  • 1.5 cup Basmati Rice
  • 2.5 cup Vegetable Broth
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 0.5 cup Golden Raisins
  • 0.25 sliced Almonds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
Instructions
  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the rice to the saucepan and stir to coat it with the butter. Cook for 2 minutes.
  4. Add the vegetable broth, vanilla extract, raisins, salt, and black pepper. Bring to a boil.
  5. Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove the saucepan from the heat and let it rest for 5 minutes.
  7. Fluff the rice with a fork, then stir in the sliced almonds and fresh parsley.
  8. Serve the golden vanilla rice pilaf hot.
