Ingredients
  • 2 cup Gluten-free flour blend
  • 2 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 cup Ripe red papaya, mashed
  • 1 cup Unsweetened shredded coconut
  • 1 cup Chopped pecans
  • 0.5 cup Coconut oil, melted
  • 0.5 cup Honey
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, combine the mashed red papaya, shredded coconut, chopped pecans, melted coconut oil, honey, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice and serve.
