The tradition of carving pumpkins into Jack-o'-Lanterns originated in Ireland, where turnips were originally used. When Irish immigrants arrived in America, they discovered that pumpkins were more readily available and easier to carve, leading to the tradition we know today.

Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 3/4 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Orange food coloring
  • 1/4 teaspoon Black food coloring
  • 1/2 cup Powdered sugar
  • 1 tablespoon Milk
  • 12 Candy eyeballs
Instructions
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half. Add orange food coloring to one half and black food coloring to the other half. Mix until the colors are evenly distributed.
  6. Shape each dough half into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Roll out the orange dough to 1/4 inch thickness. Use a pumpkin-shaped cookie cutter to cut out pumpkin shapes.
  9. Repeat step 8 with the black dough.
  10. Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.
  11. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  12. In a small bowl, whisk together the powdered sugar and milk to make the glaze.
  13. Drizzle the glaze over the cooled cookies and immediately place candy eyeballs on top.
  14. Let the glaze set before serving.
