Ingredients
  • 2.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 3/4 cup Granulated sugar
  • 1 large Egg
  • 1/2 teaspoon Vanilla extract
  • 1 tablespoon Lemon zest
  • 2 tablespoon Fresh lemon juice
  • 1 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk the flour, baking powder, and salt together.
  3. In a separate large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, lemon zest, and lemon juice to the butter mixture, and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, and mix until just combined.
  6. Roll the dough into 1-inch balls and place them on a baking sheet.
  7. Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.
  8. Remove from the oven and let the cookies cool for 5 minutes on the baking sheet.
  9. Transfer the cookies to a wire rack to cool completely.
  10. Once the cookies are cooled, dust them with powdered sugar.
