  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the blueberries and sugar. Set aside to macerate for 10 minutes.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and ground ginger.
  4. Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until it resembles coarse crumbs.
  5. Stir in the milk and vanilla extract until just combined.
  6. Transfer the dough onto a floured surface and gently knead it a few times until it comes together.
  7. Roll out the dough to about 1/2-inch thickness and cut out rounds using a biscuit cutter.
  8. Place the rounds on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes, or until golden brown.
  10. Allow the shortcakes to cool slightly.
  11. To serve, split the shortcakes in half horizontally. Spoon the macerated blueberries onto the bottom half of each shortcake.
  12. Top with whipped cream and place the other half of the shortcake on top.
  13. Serve immediately.
