In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt. Set aside.

In a separate large bowl, cream together butter and brown sugar until light and fluffy.

Beat in molasses, egg, and vanilla extract until well combined.

Gradually add dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half and wrap each portion in plastic wrap. Refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

Roll out the dough on a lightly floured surface to about 1/4-inch thickness.

Use gingerbread people cookie cutters to cut out shapes and transfer them to the prepared baking sheets.
