Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Brown sugar
  • 1/4 cup Molasses
  • 1 Egg
  • 1/2 teaspoon Vanilla extract
Instructions
  1. In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt. Set aside.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use gingerbread man-shaped cookie cutters to cut out shapes and place them on the prepared baking sheet.
  7. Bake for 8-10 minutes, or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. Once cooled, decorate the gingerbread men with icing and candies as desired.
