  • 12 piece Gingerbread Cookies
  • 200 gram Dark Chocolate
  • 1 cup Canned Pumpkin Puree
  • 2 cup Heavy Cream
  • 1/2 cup Powdered Sugar
  • 1/2 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Vanilla Extract
  • 1/2 cup Whipped Cream
  • 1/4 cup Crushed Gingersnaps
Instructions
  1. Melt the dark chocolate and set aside to cool.
  2. In a mixing bowl, whisk together the canned pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract.
  3. In a separate mixing bowl, beat the heavy cream until soft peaks form.
  4. Gently fold the melted chocolate into the pumpkin mixture.
  5. Gradually fold in the whipped cream until well combined.
  6. In individual serving glasses, layer crumbled gingerbread cookies, pumpkin mousse, and crushed gingersnaps.
  7. Repeat the layers until the glasses are filled.
  8. Refrigerate for at least 1 hour to allow the flavors to meld.
  9. Serve chilled, topped with whipped cream and additional crushed gingersnaps.
