Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  3. Add the spinach to the pan and cook until wilted. Remove from heat and let it cool.
  4. In a large bowl, crumble the feta cheese. Add the cooled spinach mixture, beaten eggs, dill, salt, and pepper. Mix well.
  5. Grease a baking dish with olive oil or cooking spray. Place a sheet of phyllo dough in the dish, letting the edges hang over the sides. Brush the phyllo sheet with olive oil. Repeat this step with 4 more sheets, rotating each sheet slightly to cover the entire dish.
  6. Pour the spinach and cheese mixture into the dish, spreading it evenly.
  7. Layer the remaining phyllo sheets on top, brushing each sheet with olive oil. Fold the overhanging edges of the bottom sheets over the top sheets to seal the filling.
  8. Bake in the preheated oven for 45 minutes, or until golden brown.
  9. Remove from the oven and let it rest for 10 minutes before cutting into squares.
  10. Serve warm and enjoy!
