Ingredients
  • 500 gram Potatoes
  • 300 gram Leeks
  • 50 gram Butter
  • 1000 milliliter Vegetable Stock
  • 200 milliliter Heavy Cream
  • 100 gram Spinach
  • 20 gram Parsley
  • 10 gram Chives
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. Peel and chop the potatoes.
  2. Clean and slice the leeks.
  3. In a large pot, melt the butter and sauté the leeks until soft.
  4. Add the potatoes and vegetable stock to the pot and bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
  6. Using an immersion blender, puree the soup until smooth.
  7. Stir in the heavy cream.
  8. Add the spinach, parsley, and chives to the soup and cook until wilted.
  9. Season with salt and pepper.
  10. Let the soup rest for 10 minutes before serving.
  11. Garnish with additional herbs, if desired.
