  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  4. Using an immersion blender or a regular blender, blend the soup until smooth.
  5. Return the soup to the pot and stir in the milk, cheddar cheese, and parmesan cheese. Cook over low heat until the cheese is melted and the soup is heated through.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh parsley.
