  • 1.5 cup All-purpose flour
  • 2 tablespoon Cocoa powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 2 tablespoon Red food coloring
  • 1 teaspoon Vanilla extract
  • 0.75 cup Buttermilk
  • 1 teaspoon White vinegar
  • 1 teaspoon Baking soda
  • 1 package Cream cheese
  • 2 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 0.5 cup Heavy cream
Instructions
  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the red food coloring and vanilla extract.
  4. In a small bowl, combine the buttermilk, vinegar, and baking soda. Add the flour mixture to the butter mixture alternately with the buttermilk mixture, beginning and ending with the flour mixture.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Then transfer to a wire rack to cool completely.
  7. In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, beating until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  8. Once the cupcakes have cooled, frost them with the cream cheese frosting. Enjoy!
