  1. In a mixing bowl, cream together butter and granulated sugar.
  2. Add the egg and vanilla extract, and mix well.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the creamed mixture and mix until just combined.
  5. Divide the dough into two portions. Shape each portion into a disc and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  6. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. Take one portion of the dough out of the fridge and roll it out to a thickness of about 1/4 inch on a lightly floured surface.
  8. Use ghost-shaped cookie cutters to cut out ghost shapes from the dough and place them on the prepared baking sheet.
  9. Bake for about 10-12 minutes or until the edges are lightly golden.
  10. Let the cookies cool completely on a wire rack.
  11. Meanwhile, melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring well between each interval, until smooth.
  12. Use a toothpick or fine brush to paint the melted chocolate onto the cooled cookies, creating the ghost faces.
  13. Allow the chocolate to set before serving.
  14. Repeat steps 7-13 with the remaining portion of dough and white chocolate.
  15. Optional: Add black food coloring to a small portion of melted white chocolate and use it to draw eyes and mouths on the ghosts.
