Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.

Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.

Stir in the tomato sauce, diced tomatoes, kidney beans, corn kernels, salt, pepper, chili powder, cumin, and paprika. Simmer for 10 minutes.

In a greased casserole dish, layer half of the tortilla chips, followed by half of the meat mixture, and half of the cheddar cheese. Repeat the layers.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh cilantro before serving.
