  • 1.5 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk
  • 1 cup Fresh peaches, diced
  • 2 tablespoon Powdered sugar, for dusting
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the milk, starting and ending with the dry mixture.
  6. Gently fold in the diced peaches.
  7. Divide the batter evenly among the cupcake liners.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cupcakes to cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.
  10. Once cooled, dust the cupcakes with powdered sugar before serving.
