Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Unsalted butter, melted
  • 2 package Cream cheese, softened
  • 0.75 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 3 large Eggs
  • 2 tablespoon Fresh lemon juice
  • 1 cup Blueberries
  • 1 cup Strawberries, sliced
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition. Stir in lemon juice.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 55-60 minutes or until the center is set and the top is lightly browned.
  6. Turn off the oven and leave the cheesecake inside for 1 hour.
  7. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 2 hours or overnight.
  8. Before serving, top the cheesecake with blueberries and sliced strawberries.
  9. Slice and serve chilled.
