Ingredients
  • 2 tablespoon Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 0.25 cup All-purpose flour
  • 2 cup Chicken broth
  • 1.5 cup Beer
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Hot sauce
  • 2 cup Cheddar cheese
  • 2 cup Monterey Jack cheese
  • 0.5 cup Heavy cream
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Parsley
Instructions
  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.
  2. Sprinkle the flour over the onions and garlic, and cook for 1-2 minutes, stirring constantly.
  3. Slowly whisk in the chicken broth, beer, Dijon mustard, Worcestershire sauce, and hot sauce.
  4. Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally.
  5. Reduce the heat to low and gradually stir in the cheddar cheese and Monterey Jack cheese until melted and smooth.
  6. Stir in the heavy cream, salt, and black pepper.
  7. Continue to cook for another 5 minutes, stirring occasionally.
  8. Remove from heat and let the soup rest for 5 minutes.
  9. Serve the soup hot, garnished with parsley.
