  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, beat the eggs, sugar, oil, and vanilla extract until well combined.
  5. Add the grated zucchini to the wet ingredients and mix well.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the walnuts.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let the bread cool in the pan for 10 minutes.
  11. Transfer the bread to a wire rack to cool completely before slicing and serving.
