Ingredients
  • 200 gram Butter
  • 200 gram Brown sugar
  • 4 unit Eggs
  • 200 gram All-purpose flour
  • 1 teaspoon Baking powder
  • 400 gram Mixed dried fruit
  • 100 gram Cherries
  • 100 gram Almonds
  • 2 tablespoon Brandy
  • 1 teaspoon Orange zest
  • 1 teaspoon Lemon zest
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground nutmeg
Instructions
  1. Preheat the oven to 150°C (300°F) and line a cake tin with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, until well combined.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the flour mixture to the butter mixture, mixing well after each addition.
  6. Stir in the mixed dried fruit, cherries, almonds, brandy, orange zest, lemon zest, cinnamon, and nutmeg.
  7. Pour the batter into the prepared cake tin and smooth the top.
  8. Bake for 3 hours or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cake cool in the tin for 10 minutes.
  10. Transfer the cake to a wire rack to cool completely.
  11. Once cooled, wrap the cake in parchment paper and aluminum foil.
  12. Let the cake rest for at least 4 hours or overnight before serving.
  13. Serve and enjoy!
