  • 1.5 cup Pie Crust
  • 2 tablespoon Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Mushrooms
  • 2 medium Yellow Squash
  • 3 large Eggs
  • 1 cup Heavy Cream
  • 1 cup Cheddar Cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Fresh Thyme
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a pie dish.
  3. In a skillet, melt the butter over medium heat.
  4. Add the onion and garlic and cook until softened.
  5. Add the mushrooms and squash and cook until tender.
  6. In a bowl, whisk together the eggs, heavy cream, cheddar cheese, salt, black pepper, and fresh thyme.
  7. Pour the egg mixture over the cooked vegetables.
  8. Pour the mixture into the pie crust.
  9. Bake for 40-45 minutes, or until the pie is set and golden brown.
