Ingredients
  • 2 cup Masa harina
  • 1 cup Water
  • 1 cup Pinto beans, cooked
  • 1 cup Cheese (quesillo or mozzarella)
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Salt
Instructions
  1. In a mixing bowl, combine the masa harina, water, and salt. Mix well until a soft dough forms.
  2. Divide the dough into 8 equal portions and flatten each portion to form a small disc.
  3. In a separate bowl, mash the cooked pinto beans.
  4. Take one disc of dough and place a spoonful of mashed beans and a spoonful of cheese in the center.
  5. Fold the edges of the dough over the filling and seal the pupusa.
  6. Heat oil in a skillet over medium heat and cook the pupusas for about 3-4 minutes on each side, until golden brown.
  7. Serve hot with salsa or curtido (pickled cabbage salad).
