  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits and mix them with melted butter. Press the mixture into the bottom of a greased springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and lemon juice.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 45-50 minutes or until the center is set.
  6. Remove from the oven and let it cool in the pan for 10 minutes.
  7. Carefully remove the sides of the springform pan and let the cheesecake cool completely.
  8. Refrigerate for at least 3 hours or overnight.
  9. Serve chilled and enjoy!
