Ingredients
  • 4 cup Vegetable Broth
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 medium Potatoes
  • 1 cup Broccoli
  • 1 cup Cauliflower
  • 1 cup Cheddar Cheese
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Parsley
Instructions
  1. In a large pot, heat vegetable broth over medium heat.
  2. Add carrots, celery, onion, and garlic to the pot. Cook until vegetables are tender.
  3. Add potatoes, broccoli, and cauliflower to the pot. Cook for another 10 minutes.
  4. In a separate saucepan, melt cheddar cheese with milk over low heat until smooth.
  5. Pour cheese mixture into the pot with the vegetables. Stir well.
  6. Season with salt and black pepper.
  7. Cook for an additional 5 minutes.
  8. Serve hot, garnished with parsley.
