Ingredients
  • 8 ounce Cream cheese
  • 1 cup Shredded cheddar cheese
  • 1 cup Grated carrot
  • 2 tablespoon Chopped fresh parsley
  • 1 teaspoon Minced garlic
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 cup Chopped pecans
  • 2 tablespoon Chopped fresh chives
Instructions
  1. In a mixing bowl, combine cream cheese, cheddar cheese, grated carrot, parsley, minced garlic, salt, and black pepper. Mix well.
  2. Shape the mixture into a ball and wrap it in plastic wrap. Refrigerate for at least 1 hour.
  3. In a separate bowl, combine chopped pecans and chopped fresh chives.
  4. Roll the chilled cheese ball in the pecan-chive mixture, pressing gently to adhere.
  5. Serve with crackers or sliced vegetables.
