Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Butter, melted
  • 2 package Cream cheese, softened
  • 0.75 cup Sugar
  • 1 teaspoon Vanilla extract
  • 3 large Eggs
  • 0.5 cup Sour cream
  • 1 tablespoon Lemon juice
  • 0.5 cup Strawberry jam
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and lemon juice.
  4. Pour half of the cream cheese mixture over the crust in the springform pan. Spoon the strawberry jam over the cream cheese mixture. Pour the remaining cream cheese mixture over the jam.
  5. Bake for 55-60 minutes or until the center is set and the top is lightly browned. Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the pan.
  6. Refrigerate for at least 2 hours or overnight before serving. Slice and enjoy!
