Ingredients
  • 2 tablespoon Butter
  • 1 medium-sized Onion
  • 2 clove Garlic
  • 2 tablespoon All-purpose flour
  • 4 cup Chicken or vegetable broth
  • 2 cup Milk
  • 1 cup Cheddar cheese
  • 1 cup Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Parsley
Instructions
  1. Melt the butter in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Sprinkle the flour over the onion and garlic mixture, and stir well to combine. Cook for 1-2 minutes.
  3. Slowly pour in the chicken or vegetable broth while stirring continuously. Bring to a simmer and cook for 5 minutes.
  4. Add the milk, cheddar cheese, and parmesan cheese to the pot. Stir until the cheese is melted and the soup is smooth.
  5. Season with salt and black pepper, and simmer for another 5 minutes.
  6. Remove the pot from heat and let the soup rest for 5 minutes.
  7. Use an immersion blender or transfer the soup to a blender, and blend until smooth and creamy.
  8. Serve the double cheese soup hot, garnished with chopped parsley.
