Ingredients
  • 1 can Canned black beans
  • 1 can Canned kidney beans
  • 3 tablespoon Grated onion
  • 1 cup Bread crumbs
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 large Egg
  • 1/2 cup All-purpose flour
  • 2 tablespoon Vegetable oil
  • 4 slice Sliced Swiss cheese
  • 8 slice Sliced rye bread
  • 4 tablespoon Butter
  • 4 tablespoon Thousand island dressing
Instructions
  1. In a large mixing bowl, mash the black beans and kidney beans using a fork or potato masher.
  2. Stir in the grated onion, bread crumbs, ground cumin, salt, black pepper, and egg until well combined.
  3. Shape the mixture into 4 patties.
  4. Coat each patty with all-purpose flour.
  5. Heat the vegetable oil in a skillet over medium heat.
  6. Cook the patties for 4-5 minutes on each side, or until browned and heated through.
  7. Top each patty with a slice of Swiss cheese.
  8. Toast the rye bread slices.
  9. Spread butter on one side of each toasted bread slice.
  10. Place a patty with cheese on the buttered side of a bread slice.
  11. Drizzle 1 tablespoon of Thousand Island dressing on top of the patty.
  12. Place another buttered bread slice on top.
  13. Repeat with the remaining patties and bread slices.
  14. Heat a clean skillet over medium heat.
  15. Cook the sandwiches for 2-3 minutes on each side, or until the cheese is melted.
  16. Serve hot and enjoy!
