Ingredients
  • 1 cup Barley
  • 2 cup Mushrooms
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Parmesan cheese
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add onions and garlic, cook until softened.
  3. Add mushrooms and cook until they release their moisture.
  4. Add barley, vegetable broth, thyme, salt, and pepper to the skillet. Bring to a boil.
  5. Cover the skillet and transfer it to the preheated oven. Bake for 45 minutes or until the barley is tender and the liquid is absorbed.
  6. Remove the skillet from the oven and let it rest for 10 minutes.
  7. Sprinkle with Parmesan cheese before serving.
