Ingredients
  • 1 cup Barley
  • 2 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrot
  • 2 stalk Celery stalk
  • 1 medium Red bell pepper
  • 1 cup Frozen peas
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Grated Parmesan cheese
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring the vegetable broth to a boil. Add the barley and let it simmer for 20 minutes until tender.
  3. Meanwhile, chop the onion, garlic, carrot, celery, and red bell pepper.
  4. In a separate pan, heat olive oil over medium heat. Add the chopped vegetables and sauté for 5 minutes until softened.
  5. Add the sautéed vegetables, frozen peas, dried thyme, dried rosemary, salt, and black pepper to the pot with cooked barley. Mix well.
  6. Transfer the mixture to a casserole dish and sprinkle grated Parmesan cheese on top.
  7. Bake in the preheated oven for 20 minutes until the cheese is golden and bubbly.
  8. Let it rest for 10 minutes before serving.
