Ingredients
  • 200 gram Dark chocolate
  • 200 gram Butter
  • 200 gram Sugar
  • 4 unit Eggs
  • 150 gram All-purpose flour
  • 30 gram Cocoa powder
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 200 gram Raspberries
  • 50 gram Powdered sugar
  • 200 gram Whipped cream
  • 10 gram Fresh mint leaves
Instructions
  1. Preheat the oven to 180°C (350°F) and grease a round cake pan.
  2. Melt the dark chocolate and butter together in a heatproof bowl set over a pan of simmering water.
  3. In a separate bowl, whisk together the sugar and eggs until pale and fluffy.
  4. Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly.
  5. Sift in the flour, cocoa powder, baking powder, and salt. Fold gently until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. While the cake is cooling, prepare the raspberry filling by mashing the raspberries and powdered sugar together.
  10. Once the cake has cooled, carefully slice it in half horizontally.
  11. Spread the raspberry filling on the bottom half of the cake.
  12. Place the top half of the cake back on and dust with powdered sugar.
  13. Serve slices of the cake with whipped cream and garnish with fresh mint leaves.
