Ingredients
  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoon Sugar
  • 2 large Eggs
  • 1 cup Buttermilk
  • 1/4 cup Vegetable oil
  • 1 medium Jalapeno pepper
  • 1/2 cup Cheddar cheese
  • 1/2 cup Corn kernels
  • 1/4 cup Green onions
  • 1 tablespoon Cilantro
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a 9-inch (23cm) square baking dish.
  2. In a large bowl, combine the cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat the eggs, buttermilk, and vegetable oil together. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the jalapeno pepper, cheddar cheese, corn kernels, green onions, and cilantro.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it rest for 5 minutes before serving.
  8. Cut into squares and serve warm.
